Here’s a Crispy Fried Chicken recipe that you’ll absolutely love! 

Ingredients

For the Chicken:

Chicken drumsticks or thighs: 500g (skin-on for extra crispiness)

Buttermilk: 1 cup (or use 1 cup milk + 1 tbsp lemon juice)

Garlic powder: 1 tsp

Paprika: 1 tsp

Salt: 1 tsp

Black pepper: 1/2 tsp

For the Coating:

All-purpose flour: 1 cup

Cornstarch: 1/4 cup (for extra crispiness)

Baking powder: 1/2 tsp

Red chili powder: 1 tsp

Dried oregano or mixed herbs: 1 tsp

Salt: 1/2 tsp

Black pepper: 1/2 tsp

For Frying:

Oil: For deep frying

Instructions

1. Marinate the Chicken:

1. In a large bowl, mix buttermilk, garlic powder, paprika, salt, and black pepper.

2. Add the chicken pieces, ensuring they are fully submerged.

3. Cover and marinate in the fridge for at least 4 hours (overnight for best results).

2. Prepare the Coating:

1. In a separate bowl, mix flour, cornstarch, baking powder, chili powder, oregano, salt, and black pepper.

3. Coat the Chicken:

1. Remove the chicken from the marinade and let the excess drip off.

2. Dredge each piece in the flour mixture, pressing firmly to coat well.

3. For extra crispiness, dip the floured chicken back into the buttermilk and then coat it in the flour mixture again (double coating).

4. Fry the Chicken:

1. Heat oil in a deep pan or fryer to 170-180°C (340-350°F).

2. Carefully place the coated chicken pieces into the hot oil, ensuring not to overcrowd the pan.

3. Fry for 10-12 minutes, turning occasionally, until golden brown and cooked through.

4. Remove and drain on paper towels to absorb excess oil.

5. Serve:
