Ingredients:
– 1 pound ground beef
– 1 medium onion, chopped
– 1 medium bell pepper, chopped
– 1 (10-ounce) can diced tomatoes with green chilies, drained
– 1 packet taco seasoning
– 1 (8-ounce) can refrigerated biscuits
– 1 cup sour cream
– 1 cup mayonnaise
– 1 packet ranch dressing mix
– 1 cup shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1 (4-ounce) can sliced jalapeños (optional)

Directions:
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Add in the chopped onion and bell pepper, and sauté until they’re nice and soft.
3. Stir in the taco seasoning and drained diced tomatoes with green chilies, cooking for another 3-5 minutes to let those flavors meld together.
4. Spread the biscuit dough evenly across the bottom of your prepared baking dish and give it a quick pre-bake for 5 minutes, just until they start to puff up a bit.
5. Layer the beef mixture over the biscuits.
